I believe it’s made by traditional methods (at least tastes like it), but the pretzel twist to the story is this one is made in Singapore 🥨🌴

Yeah it’s dangerous to handle which is why it’s uncommon outside of traditional settings. In North America baking soda is often used. But the lye is what gives them their distinctive texture

Yeah but so is baking soda! The pretzels get a bath in a solution of water and lye (or the baking soda, also this is where bagels get a malt or salt soltion bath) 

then that after the bath they are sprinkled with salt and baked. The solution breaks down something in the chemistry so when it bakes you get that flaky/chewy/crunch

you can tell when somebody skips this step because they taste like just boring shaped bread without being dipped ￼

Personally, I’ve only ever used baking soda, but that’s because I’m a pussy and I’m scared of touching and storing lye, but if I’m out and about, I will eat the fuck out of some lye dipped pretzels ￼

Best in southern Germany /bavaria - I am from the north so wasnt a thing when I grew up. We had Laugenstange which is basically the same dough but in a stick version. 
But whenever I go back to Germany I get them - nothing better, try with salted butter for the ultimate salt shock. So nice. 🥨
