Being single and not eating out a lot is fucking hard. How do I cook for just myself? Haven’t really figured it out yet, but I need to. I want to get in better shape and start eating healthier before it’s too late. Those years are moving fast!

Load your freezer with frozen vegetables. Load your fridge with fresh vegetables. Make portion controlled sizes of dishes that contain one vegetable portion / one protein portion / one carbohydrate portion/ one meat fish portion (if that's your thing) Make for two and freeze half. It takes a bit of effort to not just eat the same thing every day but you're going to feel more motivated to do so the better nutrition you have. Sweet potato is a go to for me, as are eggs, as is pasta (tend to eat less of this now). Tinned tomatoes are good too. Keep bottles of things like cooked chick peas and lentils so you can throw into a salad to bulk out. Learn how to cook rice (or buy a rice cooker - they are cheap) Get an air fryer. Hope that helps!

It is hard. It limits somewhat what dishes you can do. Salads are good as you can easily make any size of portion fast. Also pasta is easy, fast, cook and can be done for a single person.

I always cook for 2 days (can't get meat for 1 person) and just eat 2 days the same, or with a day inbetween. I'd stock up more in a freezer but i don't even have that and i never trust food that's been cooked over 3 days ago.

Freezer. Cook as you always would, freeze the leftovers in individual serving size meals. Then, when you just don’t feel like it, you have a freezer full of healthy, home cooked “fast” food.

I love a one pot noodle soup dish, or just have leftovers throughout the week/put them in the freezer!

Make a bunch and freeze it! You can freeze all kinds of things like spaghetti sauce, BBQ, enchiladas, etc. That way, you get to enjoy it now, and again anytime in the next 3-6 months.

Pick one day a week to do most of the cooking. For example, if you eat meat cook up a bunch of chicken. Make a soup or a pot of chili. Bake some sweet potatoes and or potatoes. Make a huge salad. Etc. Then you can mix and match throughout the week with minimal effort.
