gm if you’re struggling to get a crust on a steak; leave it covered (paper towel is fine) on a plate after pouring a generous amount of salt on it; it’ll be good for a few days dry steak + hot pan + lil oil = crust

I think part of the trick is to pat dry the steak before salting too? Putting a wet steak on a grill prevents the sear.

Made some steak last night and just let it get to room temp, pat dry, season, and then added a little oil in the pan. Once, it was seared on both sides with a nice crust basted with fresh herbs & salted butter. Turned out magnificent. I'll have to try this method as well. Love experimenting with cooking 🙏

Legit. Minimum 2 hour in the fridge with salt, overnight for real boss shit. But the best trick is reverse sear especially if it’s just one or two steaks, airfryer kills it. Probe therm, low temp til just below med rare, then hit that final sear in a hot cast iron for crust, and brown butter herb that sumbitch if you real funky 🤌
