gm if you’re struggling to get a crust on a steak; leave it covered (paper towel is fine) on a plate after pouring a generous amount of salt on it; it’ll be good for a few days dry steak + hot pan + lil oil = crust

yep this is my go to - minimum half hour and then can 'au poivre' it easy
