it will be more about how to sell rather than what you sell. near my parents' house in france, there's a baker who doesnt want to wake up at 2am an open shop at 8am until 5pm: he casually starts making his plain sourdough bread at 8/9am and only opens shop at 4pm until 6pm. very small shop, small production, mid-range price, clients in awe
