Thank you! ☺️ It's so fun to make! I've been testing out using egg white in granola for the first time and I really like the texture. Is there are recipe you've liked lately?

what’s the egg white texture like? i’ve never tried that with granola, how’re you incorporating it? don’t mind me, just super nosey in yr recipes 👀😅

Instructions 1. Preheat oven to 350 degrees. 2. Mix dry ingredients, spread on a 13x17” baking sheet lined with foil (I used a silicon baking mat and literally licked it clean) or parchment paper. Toast the mix in the preheated oven for 15 minutes, stirring occasionally. 3. While the oats are toasting, combine the wet ingredients. 4. After the oats are toasted (they should be a little crunchy and aromatic), take them out. I make a little oat hill in the middle and drizzle the honey mixture over the oats. Stir until well combined. 5. The oats should be covered in honey and a little crowded to make delicious clusters) 6. Place the baking sheet back in the oven and turn the oven OFF. this will allow the granola to finish toasting without burning. Let it sit in the oven for 8 minutes. Remove from oven and let cool for about 20-30 minutes. Then smash the oats, and the granola is ready :)

* 2 TBS - 1/2 cup of coconut oil can help stretch the honey to coat every bite. I’ve made a batch without it with super flowing honey if you don’t have any on hand. Note: On a third attempt I added the coconut oil and removed the hot granola from the pan back into the mixing bowl to ensure the wet coated all the ingredients evenly. This resulted in a much softer granola akin to a commercial soft granola bar. I can shape it and it will hold its shape in whatever container I place it in. If you want extra crunch, mix the wet into the pan and don’t coat it all. Also leave out the coconut oil completely and let the honey do its magic.

Dry Ingredients * 3 cups Rolled Oats (Bob's Red Mill, Old Fashioned Rolled Oats, Whole Grain, Gluten Free - they have the best taste and texture) * Chopped raw nuts (any kind) to taste - I do 1/2 cup pecans and a half cup of almonds. If they are big, I throw them in the food processor. * Cinnamon - measure with your heart * (optional)Pumpkin spice for a little extra kick * Salt - 1/2 teaspoon or so (I tossed the oats in a bowl with the cinnamon, pumpkin spice, and salt to make sure I spread it out as much as possible) * Shredded coconut - I did 1/4 cup but I wish I did more because it doesn’t come through with the oats and nuts Wet Ingredients * 1/2 cup Honey * (From XX mom’s recipe: add brown sugar for extra sweetness and crunch in the final product) * 1 tsp of vanilla and 1/8 tsp almond extract, I don’t think you can have too much here. I mix it into the honey.
