What are some good online roasters to try? 

Don’t really love light roasts that are acidic but am open to try new stuff

I’ve been buying beans from a local roaster and have them grind it - will definitely keep buying from them alongside trying new stuff from online

Looks cool! If you can, find a local roaster. Over time you might get great tips on how to optimize the flavor of their beans. I have a similar taste preference to you, but you might be surprised how much the pour technique affects the flavors of freshly roasted beans - lower temp water for instance.
