not sure if you know 🇫🇷 chefjeanpierre (dot com) but that is exactly how he prep his stake (on that pan, overnight, with salt). then cooks his on iron skillet for a few mins and tosses in oven, amazing.

I’ll do reverse sear: oven first and then finish on an insanely hot grill outside. Rest for 10 min with some butter on top.

have you ever tried the always-keep-flipping technique? i’m still a fan of reverse sear with charcoal grill to get some smoke, but have moved to this method for the crust 🤌 https://www.seriouseats.com/the-food-lab-flip-your-steaks-and-burgers-multiple-times-for-better-results
