then cooks his on iron skillet for a few mins and tosses in oven, amazing.

I didn’t learn about this Cafè de Paris steak style until recently and it is my fave now by far

I’ll do reverse sear: oven first and then finish on an insanely hot grill outside. Rest for 10 min with some butter on top.
