Kagoshima is literally the only prefecture in Japan where it’s adviseable to eat chicken sashimi without asking a lot of questions. 

It’s a local delicacy that’s been consumed since at least the Edo period (1603–1867). 

Back in the day, the Satsuma clan, which ruled Kagoshima, actively engaged in cockfighting, and the losing roosters were slaughtered and eaten immediately, sometimes raw, which is considered the origin of torisashi.

Yeah, I eat this a couple times per week. There is a very specific technique to slaughter the chickens and cut them them prevents the bacteria from flooding the entire chicken ehich is what typically happens. It all takes place at the farm in a sterile environment with a specific set of knives. Its highly regulated also.
