IMO car dependence in the (vast majority of the) US is a big factor that is hard to reverse, even if food improves. contributes to diabetes, too (not moving much after eating). when i lived in the california suburbs and had to drive everywhere, my daily step count was regularly in the 2500 range (mostly walking from the office to the kitchen smh)... and i love to walk! but it just didn't make sense to walk anywhere, half the stroads didn't even have sidewalks and it was safer to drive. everywhere else i've lived, i get 7500+ steps easily without even noticing.

I agree Food is what — fuel Americans have set it up so we do not fuel appropriately for the task at hand — the task being sitting on our asses

i will say that american taste (culturally) and restaurants use waaaaaay more salt and sugar in recipes than almost anywhere else i've been in the world. maybe not the bougie erewhons, but your typical household/eatery for sure. i find this also contributes to overeating for me. constantly bouncing between very salty food and very sweet drink (even if fake sugar) is such a strong feedback loop that keeps demanding more.
