I assumed (heard, believed, don't make bread because I don't know) that it's because - America bread has added sugars and other crap - America bread takes shortcuts when making, like quick-rise yeast and stuff In my mind, I tell myself a story that european bread (and most foods) are just made more natural, over a longer period of time, with fewer shortcuts, and thus our gut doesn't have to take extra work to break it down .

Bread makers the move now if you’re looking for solutions. Some super simple ones and the bread is more europe than anything I can readily buy. Think the math came out to like $2 a loaf for my set up.

america took the fast food route with bread, chasing convenience and shelf life over craft and culture. europe treats bread like a ritual, a craft passed down generations, not just fuel. maybe it’s a lesson in patience and pride baked right in.

in NA you really need to find a good bakery for a nice sourdough etc. whereas good bread just seems much more common and expected in EU. grocery store bread also a complete non-starter in NA, way too much sugar and other unnecessary additives/shortcuts taken.

If you want to know the real answer research how big tobacco took over the food industry in the 80s and how big sugar paid scientists to demonize fat vs sugar. It’s 100% tied to this and that’s why America is sick fat an poor = better pharma customers. Really good book is “the big fat lie”
