not sure if you know ๐ซ๐ท chefjeanpierre (dot com) but that is exactly how he prep his stake (on that pan, overnight, with salt). then cooks his on iron skillet for a few mins and tosses in oven, amazing.

Iโll do reverse sear: oven first and then finish on an insanely hot grill outside. Rest for 10 min with some butter on top.

Cool , reverse sear is a much safer technique to get a good juicy steak. What do you use for spices ?
