I want to try making homemade Greek yogurt :) I've been researching different methods and appliances (Instant Pot, for example) Does anyone have any tips, recipes, or appliance recommendations? :)

hello, you'll need: — 1 liter of 3.2 percent milk, — 150 ml of live yogurt with lactobacilli. step 1. pour the milk into a saucepan and place over medium heat. heat to 40 degrees celsius and remove from heat. step 2. add the yogurt to a small amount of warm milk and mix thoroughly. pour in the remaining milk, stir again. step 3. pour the prepared mixture into special containers or small jars. step 4. you can bring the yogurt to readiness in several ways: wrap it in a blanket or pour it into a thermos, leave for 6 hours. you can also use a slow cooker in "simmer" or "yogurt" mode. step 5. place the jars in the refrigerator until completely cooled.

I make mine in a large glass jar so I don't have to transfer it. That tends to ruin the set.

You can strain it through muslin if you want it even thicker, but I find a 12 hour fermentation makes it perfectly thick enough. If you do strain it, the whey makes beautiful bread if you replace some of the water with it.

this is a great idea, when I cook Adyghe cheese I have a lot of whey left over, and I use it for pancakes and bread and for cold okroshka soup:)
