Assistant #1 is awesome. Great tip. I do the double metal bowl trick because the microwave can impact the flavor depending on how fresh the garlic is.

In cooking school we have to make a lot of stocks and we all share it later. We would draw lots to see who had to prep ingredients and I hate hate hate doing onions so I would take garlic which everyone else hated and I looked up every trick on the internet and this was the fastest. I bet I did 10 huge boxes of garlic like this. My chef just laughed at me and said I was so “American” looking for short cuts. Still better than onion duty.
