Today I’m drinking matcha under the cherry blossoms in honor of @beecurious who taught me to dive even deeper into tea culture in Japan. It is said matcha tea has a deep connection with Zen Buddhism, as the practice of drinking tea was made popular by the founders of the Rinzai sect. In those days, tea was more a sort of medicine than a luxury item, filled with vitamins and even caffeine to sharpen the mind. After all, Zazen meditation can make us a bit sleepy at times, so tea was there to keep the practitioners awake. I spent the morning in meditation and now it’s time to relax and enjoy the caffeine.

Is there a good type of matcha to have without milk or is it really meant to be mixed with something? I've briefly tried not the highest quality matcha by itself in the past and it was rough on my stomach. I normally enjoy fasting in the mornings with a black coffee as part of my intermittent fasting routine. This past week enjoying cold green tea every morning reminded me that I want to test out taking routine breaks from coffee. This week I've been recovering from being sick and I'm letting my stomach rest from more acidic coffee. An alternative to morning matcha could be iced green teas which have felt good on the stomach. Much appreciated! 🙏🏻🍵🫖

I'm sorry to keep you waiting for so long! This depends on the flavor created by each type of matcha. Let's start with this: the grade of matcha that can be made into light matcha (whisked with water; usucha) should be at least ceremonial grade, as matcha in this grade is selected for better quality, allowing for a more pronounced sweet and fragrant flavor without bitterness, similar to coffee beans. However, for lattes, a premium grade can be used (the creaminess of the milk masks the bitterness). Therefore, the variety of matcha is secondary to the grade, but generally, if I were to choose usucha, I often go for Gokou, which provides a sweet-corn fragrant taste, or Asahi, which has a somewhat salty flavor and a nice matcha aroma. For lattes, I usually add a bit of bitterness from the matcha, so I tend to choose varieties like Saemidori or Yabukita.

Starting Matcha Friday Initiative, where I will share some quick info about tea and matcha. ->Black and Green teas come from the same plant species, called Camellia sinensis. ->The key difference between black and green tea is oxidation. Black tea is oxidized, while green tea is generally not. ->Processing Methods: Japanese Green Tea: Mostly steamed Chinese Tea: Typically pan-fired

Matcha can be divided to several grades which could be easily separate by color ! Imagine you harvest the top of green tea leaves , the richest green part , intense , only harvest 1 time a year. That can made "ceremonial grade" which can make Koicha (thick one) without bitterness on tip of tongue. In another way. The mixed old and flesh leaves shown in yellow-green colour which is lower grade of matcha Enjoy
