Thanks to @maie i tried Taleggio Cheese today for the first time and i have to say it has a place in my top5 of cheeses now too!! It was such a revelation because of the unique and awesome taste and the soft consistency...if you have the chance to try; highly recommended!! 👍 Now i will try to find Taleggio di Monte which is an older Variant of it! 👀 "Taleggio is a semisoft, washed-rind, smear-ripened Italian cheese that is named after Val Taleggio. The cheese has a thin crust and a strong aroma, but its flavour is comparatively mild with an unusual fruity tang. The rind is a pinkish-brown, and the interior is creamy and pale yellow. It has a protected designation of origin so that only such cheese produced in the Lombardy or Piedmont regions of Italy may be designated as Taleggio."
