I send my knives in to be sharpened by professionals.

In between sharpenings I use honing rod (aka steel) made of ceramic to straighten the edge of the blade (which notably doesn’t sharpen)

I live in nyc so they’re pretty local, but I’ve also mailed them to online manufacturers for sharpening.

I’m going to get sharpening stones at some point.

Absolutely, a few swipes down the steel before use keeps them cutting nice. Are the professionals local? I started sharpening my knives a few years ago, I’m not great at it…so always open to new ideas :)
