Buy your meat Put it the fridge for 2-3 days on a colander and a plate under so the blood coming off in these days do not combine with the meat Then add soy sauce and Worcestershire sauce Let it in for a few more hours Cook and enjoy

Cook the steak on high heat to sear the outside and lock in the juices.

After drying the meat if I have time (even just 20 mins) I set on a rack over a small pan and salt both sides, then stick in the fridge, uncovered, to let the salt absorb and dry out the outside slightly more to get that nice sear. My fave new method is reverse searing by cooking low temp in Air Fryer first.
