Unpopular opinion: ramen shops need to chill with the chashu torching. 🔥🐷 It doesn’t add flavor—just a burnt, gassy smell that overpowers the broth. Pork fat isn’t built for direct flame like beef or lamb. Torching works great in the right context. But not here. Let the pork speak for itself.
