Where is potato in pan and eat it that way ?

I am of the very strong opinion that potatoes (generally, all tubers) should be prepared two ways each time. 

chips & crisps are blanched then deep-fried.
baked potatoes get to visit "chef mike" before the oven.
mashed is the closest to being one stage (and the ingredients pull more weight).
