Adobo is one of my favorites! Here's a simple recipe:

Ingredients:
1 lb chicken (or pork, depending on your preference)
1 onion, sliced
4 cloves garlic, minced
1 bay leaf
1/2 cup soy sauce
1/4 cup vinegar
1 cup water
1/2 teaspoon black peppercorns
1 tablespoon sugar (optional)
2 tablespoons oil for frying
