Another day of keto in the books. Brekkie: veggie scramble over arugula and avocado, plus smoked salmon on the side. Lunch: shawarma-crusted air-fried chicken thighs with Greek salad and lightly dressed spinach. Dinner (carnivore): skirt steak, charred saffron-dusted veggies, and leftover spinach-cheese stuffing from my wife’s plate. Dinner (vegetarian): portobello mushrooms stuffed with that same spinach-cheese mix, plus the charred veggies. You gotta blanch the spinach properly to get the best outcome. This was one of my best if I do say so myself. Still managed to write code for roughly ~8 hrs, close a big deal, and hit the gym. Not bad for a Tuesday.
