Yes we do, we smoke and then dry in the dehydrator. Makes the whole house stink like a campfire. We cut down and old apple tree two years ago and used it. It was unbelievably good! We smoke all kinds of peppers!

Leutschauer Paprika is a great producer. True scotch bonnet from baker creek is an awesome variety. We dry hatch chiilies and pasilla also for spices. The Aji family is a staple with us, and I haven't met one I didnt like. The Charapita is one of my favorites, seeds are expensive, the germination rate is terrible, but if you can get them to crop the taste is phenomenal 👌

I absolutely love jerky but it’s so damn expensive so that’s what I’ve been thinking, go to like Costco or BJs for a nice big cut of beef to make it and save a ton of money making my own, I only buy it on special occasions like little day trips or something

Wow, that's very efficient still! Much faster than just letting them dry out in the open.

Ty so much 🫶 the dehydrator depends on the peppers and the humidity. These take about 48 hours at 145 with 8-12 trays at a time.

The last time that I grew a metric ton of peppers (paprika and cayenne, mainly), I dehydrated, ground, and vaccu-canned everything. That lasted me 8+ years...and I use paprika and cayenne A LOT. 😆

We do. We water bath can the hot sauce tho.
