About a decade ago I had socca for the first time in Nice at Chez Pipo and was obsessed. Found it in Antibes today and am in heaven one of my two favorite food groups

Wish they had comparable socca in the states I’ve searched everywhere

I just had socca last week at Maison Provence in Williamsburg and liked it but don't have much to compare it to

none of the places I’ve gone to have it so it’s too thick, not prepared the traditional way, and doesn’t taste like south of france socca

we make it at home from time to time, it pairs really well with fresh tomatoes and basil

Simple recipe: Mix 1 cup chickpea flour, 1 cup water, 2 tbsp olive oil, salt. Rest 30 mins. Pour into screaming hot oiled pan, bake at 450°F until edges crisp & top gets spotty brown. Finish with black pepper. Best served immediately!
