If you look in the bottom left corner, you can see the shapes she is pushing around to take different actions. She's got another video up where she explains the setup more. Really cool stuff even though the headline sounds like clickbait

checked twitch profile and it says electroencephalogram (EEG, recording brain activity) and eye tracking so if this was real she was looking at or thinking jump, roll, attack, etc if i'm not mistaken

It's real, but also still very basic. Basically mapping EEG patterns to specific game inputs. She's not thinking "dodge this" but rather something basic like push/pull/spin, which she has then mapped to the correct dodge input. 
Pretty cool to watch here set everything up and try out different setups.
