Depends on the plant! You could be overwatering, underwatering and this also depends on whether they are getting the right amount of sunlight to necessitate needing more water. The window they are by and the kind of sunlight your plants are getting also might need to be changed! Or it could be that your plants are getting root bound and need to be replanted into a bigger pot.

do you use any fertilizer or stuff? i've been watering pretty much the same way for >1 year and they were healthy for a while but started to look sad recently

I actually am a very low maintenance plant mom! No fertilizer, no filtered or distilled water. I am very picky and careful about my soil being sanitized/free of bugs and have a dedicated quarantine zone for any new plants that may have nasties I don’t want spreading elsewhere. And even for bug control at most I’ll use mosquito bits soaked in water or neem oil for maintenance but I haven’t had to use either in a long time! I just always assume the soil that comes with a plant can contain even human nasties like styrophome that make it hard for the plant to grow. If you’ve had them for a year and they are wilting it might be that they need to be repotted and the roots have grown too much
