That sounds good, love the textures and combinations.  I’ll share a few on my mind 

1. Soft fresh cheese like full fat cottage cheese/olive oil with ripe mulberries/splash of sherry or red wine vinegar 
2. Pastry cream, tart brisee, mare de bois strawberry, and fresh basil 
3. Golden raspberry, white chocolate, mint 
4. Foie gras, candied apricot, fresh thyme, black pepper, raw fatty nut shaved like MACademia or Marcona
5. Fresh Huckleberries, chicken jus, banyuls vinegar

What are the top 5 berry strains you recommend? + favorite pairings?

I’m usually a triple crème + basic strawberries + prosciutto loyalist bc it’s easy to find anywhere. sweet + salty + creamy always hits!!
