my secret for juicy, cheap chicken is to buy bone-in skin-on chicken legs or breasts and then roast them at 375 for ~45min with a cup of broth in the bottom of the pan also brush them with butter before rubbing your seasoning on (i use a poultry mix, garlic powder, s&p) bone-in + skin-on helps retain moisture as it acts as a heat insulator + it's cheaper since the butcher does less work :) affordable perfection π€

great quick recipe summary this week for the first time in years bought a whole chicken and broke it up myselfβ¦ wasnβt dropdead easy but prob would become easy if I did it 1-2x month will use your tips next time π

if whole chickens are on sale i always snag one!! you'll get used to breaking it down super fast i'm sure :) or you can always just spatchcock the entire thing with some garlic slices stuffed under the skin for flavour. dry off the skin + coat with kosher salt before popping it in the oven for extra crisp i'll eat it throughout the week and use it in wraps, quesadillas, etc

thought about spatchcocking it! then decided to work on knife skills this timeπ©βπ³ tried Kenjiβs mayo thing couple weeks ago, not sure it worked for me, wdyt?? either way having good protein ready to go all week π― big help for eating well at home https://youtu.be/2Sz40WqBg8E
