it’s hard to make the numbers work financially, but it feels like a clear missing piece now

I can’t speak for LA but I absolutely still need a coffeeshop as a third place, sometimes even just to be alone to clear my mind.

I think a coffee shop that low-key shames working on your laptop could really tap into an audience that is tired of that.

Even if that audience goes somewhere else to work at a coffee shop...

100% agree (remember our convo re: LeStat's) but also: coffee shops like those in Greece, comfortable and full service, you sit there and everything comes to you - to go coffee is a very recent trend

I think it’s doable though.

Japan for instance doesn’t have a togo culture and owners mostly solve it by increasing ticket price with whole bean and food.

I think one challenge is devices. 

Most people’s third space is their online space. When they’re in a coffee shop they’re not socializing much anymore, it’s laptop or phone and noise cancelling headphones.

That would be the challenge to design around with a cozier shop in 2025, in addition to what you said ofc.
