This might sound counter-intuitive, but you gotta use day-old rice. This is key. Green onions are essential. Garlic too. Don’t forget the MSG and a small dash of sugar. Game changers: a dash of Nước chấm fish sauce and bird eye chilis to your desired level of heath. Both used sparingly.
