This man makes an excellent plate of char kuey teow. He is 86 years old now, and my mother has eaten there on & off for the last 52 years. It comes with a good amount of pork lard. Cockles. And that egg is amazing. Good “wok hei”. You do have to travel for it though: Melawis Char Kuey Teow, Klang, Selangor.

It was worth it (nearly an hour out of town). Can't quite get this in New York - because the cockles aren't fresh
