"Mandi Lamb" Mandi Lamb Recipe : Ingredients: •For the Meat: - 1 kg lamb (cut into large pieces) - 1 tsp salt - 1 tsp black pepper - 1 tsp ground cumin - 1 tsp ground coriander - 1 tsp ground cardamom - 1 cinnamon stick - 2 bay leaves - 4 cloves garlic (chopped) - 1 onion (chopped) - 2 tbsp ghee or butter •For the Rice: - 2 cups basmati rice (soaked for 30 minutes) - 4 cups lamb broth - 1 tsp salt - ½ tsp ground turmeric - ½ tsp ground cardamom - ½ tsp ground cinnamon - 2 bay leaves - 2 tbsp ghee

Instructions: •Cooking the Meat: SautĆ© the onion and garlic in ghee until fragrant. Add the lamb and spices, cooking until browned. Pour in enough water and simmer until the meat is tender. •Cooking the Rice: Heat ghee in a pot, add bay leaves and spices, then stir in the basmati rice. Pour in the lamb broth and cook until the rice is fluffy and fully cooked. •Serving: Plate the rice, place the lamb on top, and garnish with almonds or raisins. Serve with yogurt sauce and fresh salad.
