Emu eggs are about 8-10 times size of regular chicken egg. Yolk/whites ratio is around 45/55 % versus normal chicken egg 35/65 % Texture is far more creamy. When I worked at Attica in australia we used to make sabayon with it since it’s so rich. I made a French omelette +fine herbs+ caviar + simple salanova salad GM

I get from farmer friends but I see them at the Santa Monica farmers market from time to time for around 40-50 each. I would check online if interested. Probably can get lower price
