When is the best time though? Rotate into a stable and wait for BTC to dip? Or go ahead regardless of BTC being at an ath 🤷♂️

It depends on if you believe BTC will be a true store of value and and adoption will continue. I believe it will so $70k BTC or $110k BTC doesn't matter to me.
