I made a tuna coconut ceviche. No measurements as usual. Picture of it in the container because I ate half of it already. Ingredients - Thai chili - Coriander - tuna - coconut cream (not milk! very important) - fish sauce - green onions - garlic - ginger - lime Chips - puffed shrimp chips Fried the garlic, ginger, and Thai chilis in a saucepan. Added coconut cream. Added fish sauce. I know that ceviche is mostly raw ingredients technically but I really like the cooked taste of ginger and garlic. Then bring saucepan over an ice bath to cool. Stir until its chilled. Then dump over tuna and add the coriander, green onions, and lime. Mix over another ice bath. Serve with shrimp chips. I definitely should’ve marinated the fish in the lime juice instead of dumping the coconut cream mixture in. But honestly I forgot my phone when I went to the grocery store so I just had to go off of memory for ingredients and style. Wasn’t too bad at all 😊

It’s a popular Asian snack! Recently people have been frying rice paper to create chips but I think the shrimp seasoning on the chips is way better with it.
