Respecting the precious gift of fresh-caught cod by cooking with love. I used fresh cherry tomatoes, chopped basil, copious amounts of garlic, and white wine to make a sauce that felt right for summer. Served with green beans and a simple bed of rice. Grateful for all the life that nourishes us.

Yes :) I usually wing it with the sauces I make for whitefish. I find it's easygoing and forgiving with different flavors so hard to mess up. I knew I wanted cherry tomatoes and basil for a summery taste, so I sautéed them first with olive oil and lots of garlic - not for long as I wanted the tomatoes to hold their shape. Then I added white wine and a squeeze of lemon (never a bad idea with cod). But the combination of tomatoes, white wine, and citrus got quite acidic. So I toned it down at the end by adding a little salted butter. That's it for the sauce. I prefer to pan fry fish in cast iron with just salt, black pepper, and olive oil. Once it got crispy on both sides, I poured the sauce all over it. The green beans were just cooked with garlic, salt, pepper, olive oil.

Thank you for taking the time to explain it so thoroughly. Cooking recipes is like meditation for me. Reading your comment was a pleasure. I hope I can make this dish soon. Because I love lots of garlic, tomatoes and basil in food. I was also thinking about acidifying the sauce with white wine. But salted butter would be a good idea🤗😋🤩
