Doing Keto for a few weeks leading up to a bunch of travel over the summer. I hate it but it does present a unique meal planning challenge, especially given my wife is also a vegetarian. Tonight was keto-friendly vegan Thai coconut curry with riced cauliflower. Sliced bell peppers with broccoli and cauliflower florets simmered in a coconut milk broth. Used a mixture of garam masala, vindaloo, curry powder, smoked paprika, tumeric, and tomato paste to form the base with some simmered onions, garlic, and a dash of ginger. Added a can of coconut milk + about a half cup of veggie stock and let it simmer till it was thick and the veggies got soft. Dropped some tamari and lime juice in at the end to deepen the flavor. All in all, really solid and clean keto from top to bottom. Iโm fucking starving though and I canโt wait to eat bread again.
