π―π² Jerk Chicken β Jamaica Ingredients: Chicken β 1 kg (pieces) Scotch bonnet pepper β 1 (or chili) Onion β 1 Garlic β 3 cloves Ginger β 1 tbsp Lime juice β 2 tbsp Allspice, thyme, cinnamon Soy sauce β 2 tbsp Instructions: Blend all marinade ingredients until smooth. Rub over chicken, marinate overnight. Grill or bake until charred and cooked through. Serve with rice and peas.

Heat milk, lemon peel, cinnamon; whisk in flour and sugar until thick. Add egg yolks off the heat and mix well. Fill pastry shells and bake at high heat until golden and caramelized.
