Doing Keto for a few weeks leading up to a bunch of travel over the summer. I hate it but it does present a unique meal planning challenge, especially given my wife is also a vegetarian. Tonight was keto-friendly vegan Thai coconut curry with riced cauliflower. Sliced bell peppers with broccoli and cauliflower florets simmered in a coconut milk broth. Used a mixture of garam masala, vindaloo, curry powder, smoked paprika, tumeric, and tomato paste to form the base with some simmered onions, garlic, and a dash of ginger. Added a can of coconut milk + about a half cup of veggie stock and let it simmer till it was thick and the veggies got soft. Dropped some tamari and lime juice in at the end to deepen the flavor. All in all, really solid and clean keto from top to bottom. I’m fucking starving though and I can’t wait to eat bread again.

Our first homecook cast, thanks for sharing, looks delicious! You doing keto to drop some weight before traveling? Been thinking about getting back into it or doing some like an animal-based diet (basically just cutting carbs)

Precisely. You know how it goes when you’re on the road. I would never do keto as a lifestyle but it’s a helluva cheat code.
