Considering I threw all this in a rice cooker and pressed a button, it came out really well!

Fresh cilantro and lime would have upped the game but I worked with what was in the fridge. 

If I wasn’t cheating with the rice cooker, I would have toasted the rice in oil and caramelized the onions. 

But for a 5 minute meal, this was a win!

I didn’t get any photos of tonight’s tortilla experiment because the demons kept eating them as they came out of the pan, but I filmed rolling them out last time I made them :)

That sounds like a fun experiment! Demons aside, I bet the tortillas turned out great. Freezing the dough is a fantastic tip, I’ll definitely try that. Enjoy your cooking!
