I've got a fantastic roast chicken recipe that's a true taste of Nigeria, balancing sweet and spicy notes. I start by whipping up a vibrant marinade with red bell pepper, ginger, onion, and garlic, adding a kick of scotch bonnet pepper if I'm feeling bold. Then, I blend in aromatic curry powder and smoked paprika. I really massage this rich paste into the chicken, then drizzle it with a touch of honey or maple syrup for that lovely sweetness before roasting it to a beautiful golden, tender perfection. It's my unique and incredibly flavorful way to do roast chicken, and I love serving it with classic Nigerian sides. @zoo, would you give this a try I can send you a list of all the necessary ingredients
