Koko Inspired Short Rib Tacos

- short ribs flanked style 
- Oaxaca & Cotija Molida cheese
- lime
- ancho chili peppers
- salt & pepper
- cumin, cinnamon 
- homemade guacamole
- homemade pickled red onions
- white onion
- jalapeños

- blend all those things up (minus steak obviously) and that’s your sauce

- pour over short ribs in slow cooker let it marinate for 7 hours, cook till falls off the bone

- Flour tortillas on medium high heat, sprinkle Oaxaca cheese on top of tortilla, melt then apply meat on top and top w sauce, add guacamole and pickled red onions and add the cotija molida cheese on top.

Nice. Need to try these. Short ribs are a cheat code
