The speed of the game is based on score not time; so things get more hectic as your score increases. You can score big by making tall sandwiches. 

Also, you can use the down arrow (or swipe down and hold on mobile) to speed up the fall speed on demand. Helpful to speed up the early game when you’ve already got your columns lined up.
