We do a little FAFO in the rice cooker. 

Craving for Taco Thursday….

1 c jasmine rice
12 oz chicken stock
2 Tbs onion and tomato
1/2 tsp garlic
1/2 tsp of turmeric 
1 tsp homemade taco seasoning 
4 oz bell peppers 


Why these ingredients and ratio? It’s because it’s what I had leftover after making other stuff. It’s an experiment :)

Considering I threw all this in a rice cooker and pressed a button, it came out really well!

Fresh cilantro and lime would have upped the game but I worked with what was in the fridge. 

If I wasn’t cheating with the rice cooker, I would have toasted the rice in oil and caramelized the onions. 

But for a 5 minute meal, this was a win!

This looks a LOT like Nigerian jollof rice but made with red oil lol.
