Insalata di riso (rice salad) is a classic Italian summer dish. It includes rice, tomatoes, gherkins, and capers, all dressed with a bit of mayo. You can also add tuna, boiled eggs, or even small pieces of German sausage. I just threw in some jalapeños in mine!
