I think the biggest unlock for me was browning the meat really well first

Anthony bourdains beef bourgoignon has good instructions for that

After that you clean up the pan with celery, carrots, onions and it has the best flavor!!!

Yeah, those are great too. Just make sure to get a good sear on the meat for flavor

I like the old slow methods on the stovetop keep me busy!

Why dont you use high pressure cook?
