sounds about right. i prefer the texture and style of pita but seems like making english muffins would be follow a similar process

as i bake more, i'm realizing that most breads (loaf, focaccia, pita, bagels, etc) can be made from the same ingredients. just comes down to hydration and shape. fun to try something new!

This is making me research English muffins. Seems like an English muffin is a sourdough pita bread, but with some milk/dairy in the mixture and cornmeal finish. Perhaps milk makes the dough stick together more to prevents the classic pita pocket from forming during baking?
