I’m also baking again. Currently making my own levin so I can make sourdough. I had to use grocery store yeast for the first batches.

Now, this is day 3 soaking a banana peal in water to created fermented sugary water. This afternoon I’ll strain the water and add flower to make my own levin. I saw a tutorial online. Trying it out. 
Before, I had some that was gifted by a friend so this is a new experiment 😅
