Lavangi, or stuffed chicken, is one of the tastiest and best traditional dishes of Baku, usually served at parties and gatherings. To prepare this dish, a whole chicken is cleaned and its belly is stuffed with a mixture of walnuts, plums, raisins, green tomatoes, and local vegetables. The stuffed chicken is then baked in the oven until it is roasted and ready to serve. In some cases, Azerbaijanis also use fish instead of chicken and pour the lavaangi ingredients into the belly of the fish.
